Noumenia Honey Cakes

1/3 cup Butter
½ cup Sugar
½ teaspoon Vanilla extract
½ teaspoon baking powder
½ cup Plus 1 tablespoon Flour; all-purpose
½ cup Butter
½ cup sugar
1/3 cup honey
½ cup slivered almonds
½ teaspoon cinnamon
Preheat the oven to 350F.
Butter a 10″ pan. (Although I use an 8inch with no problem)
Beat the eggs, sugar and vanilla until it whitens.
Add the melted butter and mix well.
Sift the flour and baking powder. and add to the previous mixture, mix gently.
Pour in the prepared pan and bake about 15 min or a bit more.
Meanwhile prepare the topping.
Melt the butter on med heat.
Add the rest of the ingred. and bring to a boil stirring constantly.
Pour the topping gently on the cake and return it to the oven for another 15-20
min. covering loosely with foil to protect from burning. (When you pour the
topping onto the cake it will fall – that’s normal)
NOTE: You will need to play around with the cooking times – these are just suggestions.
